SINGLE VINEYARD TEMIS 2017
The most authentic expression of each Malbec terroir. Since 2001 vintage, we have been the first Argentinean winery producing and comparing Single Vineyard wines.
VINIFICATION:Grapes from all the parcels were hand-picked during the first fifteen days of April, carried to the winery in boxes to prevent them from breaking, and refrigerated (10°C) for 24 hours. Grape sorting was done by hand at the sorting table, then destemmed, and the juice was gravity fed into small concrete tanks. Spontaneously fermented by the native yeasts of our terroir. During fermentation, regular punch-downs and pump-overs are done to improve aroma, color and tannin extraction from the skin to the juice. Vatting lasted 28 days. Pomace was separated from the new wine using a vertical basket press. Malolactic fermentation occurred spontaneously in tanks. Then, 225 and 600-liter barrels were filled to begin with the aging process.
TEMIS VINEYARD (1040 masl) el cepillo, valle de uco :40-year-old vineyards, even older. The soil is light and sandy, and a little bit silty. It is a permeable piece of land with pebbles and a layer of discontinuous caliche at a depth of 80 centimeters. Traditional irrigation system with water from The Andes Mountain. The climate of Temis is the coldest of all our terroirs: cold nights, warm days and soft and constant breeze. Grape maturity is slow and balanced. Massal selection of plants produces small clusters with little and compact grains.
YIELD:4.000 to 5.000 kg/ha.

AGING:100% of the wine is aged in French oak barrels for 12 months (2/3 are new barrels and 1/3 are second use barrels).

WINE TASTING NOTE:“Deep purple, aroma of fresh fruit with floral notes. On the palate, it is round with very sweet tannins and perfect harmony between wine and wood. Long finish. Decanting is recommended. Perfect drinking temperature: 16°/18°C. It can be stored for more than 8 years.
